Light and crispy keto onion rings, just like takeout! As we know, breading can be a challenge when eating on a keto or low carb diet. Sorry, for something’s almond flour and parm cheese just don’t cut it. Onion rings are one of those things. They should be light, crispy without being burn, and taste like… well… onion rings! Yup, another simple hobbit hack for delicious onion rings that taste like the “real” thing. It’s a simple recipe, so I’ll keep this simple :). Made them tonight with a chicken patty. Mmmmm.

1/2 cup whey isolate
1/2 cup crushed pork rinds
One onion, sliced and separated.
1 egg, beaten well
Hot oil – pan or deep fryer, your choice.

Heat oil. Dust onions in isolate. Set rings in a mesh strainer to keep them from leaching and making a sticky mess. Add crushed rinds to isolate, mix well. Dredge rings one by one in egg, shaking off excess, the dredge (or as I do it, in a gallon ziplock and shake) until coated. Put in oil, fry until brown, flipping once to make sure fried evenly. Toss with salt. Stuff your face 🙂

Hmph. Nailed it 🙂
