Keto Mongolian Wings with Fried Rice

Sometimes nothing hits that craving like some sweet n spicy wings. Kinda sticky, kinda sweet, a bit of heat, tender on the inside, crispy on the outside. Then, what do you have with it that is keto? Fried cauliflower rice!
Yeh, I know, cauliflower this. Cauliflower that. It still tastes like damn cauliflower. There’s one ingredient that can change all of that…

…toasted sesame oil.
Really.
It can. It has just the right amount of “nutty” (ok, hold the nutty hobbit comments…) in it to transform cauliflower BLAH to cauliflower YEH! This meal takes a little longer than the 10-15 minutes I usually can tolerate, but it is ooooh so worth it. Try it out, you won’t be disappointed 🙂

RECIPE:
Wing Sauce (should do about 25 pieces):
1 tbsp rice wine vineger
2 tbsp soy sauce or amino sauce
2 tbsp syrup (maple- or honey-flavored)
2 tsp garlic paste or minced
1 tsp sriracha
dusting of ginger

Mix together well. Heat on medium heat for 5 minutes to thicken. Remove from heat and set aside.

Wings (20 pieces total, 10 wings)

Wings – preheat oven to 400F
1/4 cup whey protein isolate
salt
oil
1 gal bag

Separate at joints, discard tips or save for stock. Toss in a bowl with salt. Let rest 5-10 minutes, then toss with oil. Put the isolate in the bag. Using 1-2 pieces of chicken at a time, drop in the bag and shake until coated. Remove to baking sheet. Repeat until all coated. Bake for 20 minutes, then flip over and bake for another 20 minutes. Remove. Coat in sauce. Sprinkle some sesame seeds on the wings for texture and “prettiness” :). Serve and enjoy.

Rice:
1 bag (12oz) cooked cauliflower rice
1/2 cup mixed onions, celery, other veggies of choice
2 tbsp toasted sesame oil
2 tbsp soy or amino sauce
2 beaten eggs

Heat skillet over med-high heat. Add liberal coating of oil. When oil hot, add rice and cook for 10 minutes, stirring frequently so doesn’t stick. Add veggies. Cook for 5 minutes. Add sesame oil. Cook for 5 minutes. Add sauce. Cook for 5 minutes (see a pattern here, lol?). Scramble eggs in the middle of skillet, then combine with rice. Reduce to low until wings are done. Serve. Enjoy. Tell me if this isn’t the best cauliflower rice you’ve had.
