Extracts. Everyone used vanilla extract but I rarely see other bloggers write recipes with anything else. Pffft. Hobbits love extracts. They are CHEAP. They come in a TON OF FLAVORS. They are zero carb, zero calories. How can you not have a slew of these little monsters in your kitchen??? We have a couple dozen :). And, if you can’t find the flavor in an extract, try a flavor drop instead. I like One-to-One flavors. They are food safe (veggie glycerin base), cheap, potent, and come in so many flavors your head will spin.
So, let’s make some muffins, ok? Recipe below.
2 eggs, beaten
1/4 cup sweetener
3/4 cup almond flour
1 tsp baking powder
1/2 tsp-ish banana extract (to taste)
1 tsp vanilla extract
1/4 walnut pieces
Preheat oven to 375
Bake for 15-20 minutes or until browned.
