Tired of the limited selection of flavors from Halo Top, Enlightened, and Rebel? I HATE the texture of Rebel and the “keto” labeled ice creams from HT and Enlightened. Plus, some of the flavors? YUCK. And why the hell isn’t there a Fudge Ripple? Straight Chocolate Chip? Make your own keto-safe ice cream at home! See below the recipe for add-in ideas!
1cup heavy cream (I used Silk non-dairy)
1 cup milk (I used Silk unflavored soy milk)
1/4 cup sweetener of choice (try to avoid erythritol, it
crystalizes, making “crunchy” ice cream. I used allulose + 10
drops sucralose for added sweetness)
1/2 tsp glucomannan or 1/4 tsp xanthan gum
1 tbsp extract (vanilla in this case)
IF NOT EATING SAME DAY: add either 2tsp grain (Everclear, 151
proof or 1/2 tbsp Everclear and 1 tbsp flavored vodka (40 proof)
to prevent icing)
Follow manufacturer’s directions for standard ice cream. If
using non-compressor machine, chill in freezer for at least
one hour before serving.
Chocolate: add your favorite low-carb chocolate syrup to the recipe as-is. Or, heat the milk, incorporate 1/4 cup cocoa to the warm mixture until combined. Chill, then add other ingredients.
Pistachio: 1 tbsp of pistachio extract. Once ice cream has finished in the machine, fold in chopped nuts.
Maple walnut: add 1/4 cup sugar-free maple-flavored syrup or 1 tbsp maple extract. Once ice cream has finished in the machine, fold in chopped nuts.
Strawberry: 1 tbsp of strawberry extract. Once ice cream has finished in the machine, fold in diced berries.
Butterscotch or fudge swirl: melt 1/2 cup Lily’s chips in the microwave or double boiler. Stir in 1/4 cup cream until combined. Once ice cream has finished, Layer alternating layers of ice cream and sauce into the container you will use to store ice cream in. Let chill in freezer for at least one hour.
