Ketofying the “best” chocolate chip cookie recipe according to the interwebs – Bon Appetit’s recipe – that is grain-free! Have to say, they are right, these things are awesome! Preheat oven to 375F 1/2 cup white sweetener of your choice (add a few liquid stevia or sucralose drops if using allulose) 1/2 cup brown sweetener (I used Swerve) 1/2 cup melted butter, coconut oil, or ghee 1 whole egg 1 egg yolk 1/2 teaspoon baking soda 2 tsps vanilla 1/2 cup almond flour 1/4 cup oat fiber 1 cup chocolate chips 1/2 cup chocolate chips for after baking Mix fat & sweetener until smooth. Beat in eggs until combined. Stir in rest of dry ingredients until dough comes together. Fold in chocolate chips. Bake 10-12 minutes or until desired doneness. Remove. Press remaining chips into the hot cookies. Let cool. EAT
