s many of you are aware, yesterday was a rough day for the members of Keto Plus. Today is a new day. I mean, seriously, when you wake up to this, it kinda puts stuff into perspective.
No, not that it’s pretty! SHOVELING, DAMNIT!! How can I be tweaked over Facebook when I have to shovel??????

Just kidding. Or not. Yes, it is pretty. And cold. And I really want it to now melt and be summer, but nature doesn’t care what I want. It cares about what is best for everyone. And that, my family, is what it is all about. The drama yesterday wasn’t about ego, it was about the complete disrespect of every member who had come to count on that group. I posted this early today on Facebook. I’m repeating part of it here so we can get it out, put it away, and move on:
Good morning! This is going to be long (no one has ever accused me of using 3 words when I can use 30,000:) ) but I feel it is important in light of the events of the last 24 hours.
1) Keto Plus is no longer under the admin team you have depended on – some of you for well over a year.
2) There has been some posts and screen shots shared surrounding this event. Some of you many feel it has been inappropriate. As a rule, our (YOUR) groups have taken the high road when it has come to discussing other groups. This has been an exception and the reasons have been important – integrity, honesty, transparency. We have always prided ourselves as admins in making sure that you always know what is going on. We care about you and don’t want you getting bad advice from people who really don’t have a clue about what they are doing, it’s dangerous, and honestly, it is mean. If you know me at all (more on that in a minute), the one thing I cannot tolerate is mean-spiritedness. You had and have a right to know what happened, why it happened, and why it is important.
3) Today is a new day, and while the fallout from yesterday will be around for a while, today we pick up, move on, and do what we do best – share, support, educate, love.
October of 2015, I was the 15th member to be added to the “new” group Keto Plus (and I’ve ALWAYS hated that name, btw). I became an admin a few minutes later because of the content I shared. Two weeks later, the founders disappeared. Those founders are the two currently running Keto Plus. When I realized they were not coming back, I had two choices – let the group fall to chaos, or make it something special. I chose the latter. I had been tossed out of more groups than I can count, seen the totalitarian way many were run, seen the “my way or the highway mentality,” the pumping of egos of the admins, reeeeally bad information, 50% of the questions answered with “read the damn pinned post,” and lack of unity. I wanted something different. I wanted a caring, supportive, intelligent, accepting community. I stopped calling people “members” and instead, made you family (insert Lilo and Stitch reference here). We were going to be different. We were. We still are. Most of all, I wanted every person who joined the group to feel welcome, respected, loved, and know that no matter what, they are not alone. I think many groups are run by people who forget that at one point in time, all this was new, scary, and against everything they had ever been told too. We strive to never be those people.
A few weeks after I took over leadership of the Keto Plus family, Steve Angel started Ketogenic Diet Open Discussion. He wanted a group with the same morals and community as Keto Plus, but open to talking about EVERYTHING related to keto – all 17 versions, health issues, intermittent fasting, etc. I joined him immediately. The response was overwhelming and from there, has grown beyond anything we could have ever imagined. Months down the road, the founders of Keto Plus popped in to make a post and leave. This happened about every 3-4 months over the past year. They came in, gave the impression they not only knew what they were doing, but that they somehow had a part in what the groups had become. They didn’t on both counts. By the time they showed up the second time, we had added to the team – YOUR team – those amazing individuals that you have come to rely on. Anu, Ben, Karen, Monica, Debbie, Cathy, Sandra, Larrisa, Nancy, Katy, Kane, Amber, Diane, Fadalia, Kimmie, Rachel, Retha, and Malyndia. You know how I know you value them? All the comments, hurt, outrage, etc yesterday and today. The endless comments about “going where ever Ben\Scott\Karen\Monica\etc is.” You made us remember, in case we forgot, why we do what we do. Because, to be blunt, we give a shit about each of you. When the founders did a sneak attack yesterday and removed us all, saying it was a “facebook issue,” we fought back. For you. For us. For family.
As you might imagine from the above, the food group has always been my “baby.” Where science is my thing, food is my passion. So, when it came time to make a new group, I wanted a name that the older members would associate with me, the Hobbit, not for my ego but to make the transition a little easier. Hobbits love second breakfast :). I thought it would be better than another “Keto Recipe Share.” Above all, the name is fun. Fun can only come with comfort and security. These groups are SAFE places. Let’s be perfectly clear – this isn’t MY group (though I do “own” it so yesterday won’t happen here), it is YOUR group. We just keep things running smoothly.

We do have a new group called Keto Second Breakfast. It’s not “my” group. It is yours. Ours. It isn’t going to all Hobbit, all the time. “Another day, only the names have changed.” If you have Bon Jovi stuck in your head now, you’re welcome :). Hey, it could be worse, it could be Justin Beeber :D. I hope you join us if you haven’t already.
Karen Olgive and I will soon be doing podcasts together as a compliment to the popular “Hobbitcasts.” These will be a little different. No, I don’t think I’ll be starting doing my recipes in video. What I would like to do is kinda show you all how to get started ketofying foods, how I go about approaching a recipe, and teaching about things to keep in mind. Basically, I want to help you learn to do what I do, without me. No, I’m not leaving :). No, you learning to ketofy things on your own isn’t going to hurt me. I don’t do this blog to make a living. Yes, there are others out there that do have keto blogs and are quite financially successful. I don’t make much of this, enough to keep the doors open and make some donations to charity. I don’t sell cookbooks to get a Porsche, I do them to make it easier for those who want something they can take into the kitchen. I could make more money, sure, but that would mean giving up my integrity and cheating all of you so I can have nice things. That’s not how I roll. I want to empower you. The more involved in your health and giving awesome food to the ones you love, the more successful you will be. Your success is my success and reward.
But, what does this have to do with pie, Hobbit?
I didn’t create this recipe from fairy dust and the tears of Orcs. I looked at a few traditional recipes and modified them to fit our lifestyle. Yeh, I ketofied it. But Hobbit, the holiday is over!
Is there really a BAD day to have pie?

Let’s do some coconut cream pie!!!

Hobbit’s Coconut Cream Pie
1 batch of my fathead pie crust (I added 1/4 tsp coconut extract for a little flavor kick) PRE-BAKED.
2 lg egg
1 can full-fat coconut milk
1/2 cup sweetener of your choice
1/2 tsp coconut extract
1 tsp xanthan (or 2 tsp guar) gum
1/2 cup UNSWEETENED shredded coconut
1 can of coconut cream (or 1.5 cups separated from full-fat coconut milk that has been refrigerated)
1 tsp gelatin
1/2 cup sweetener
a couple of tbsp toasted unsweetened coconut to sprinkle on top
Put your mixing bowl and beaters for the topping in the freezer while making the filling.
Beat egg well in a bowl or zip it up in a blender. Now, many recipes have you ‘temper’ the egg. I skipped this (they also have you use just egg yolks, you know me and separating eggs, ain’t happenin’ and it works just fine). ALL the ingredients in a sauce pan THEN turn on heat to med-low. Whisk frequently until starts to just steam. Increase heat until it just starts bubbling, constantly whisking. Remove from heat and let cool for about 10 minutes. Pour into crust and let cool all the way. Put in fridge while you make the topping.
Take beaters and bowl out of freezer. Add cream and beat on high. when it starts to firm up and get a little fluffy, sprinkle the gelatin over the top while beating. Beat for 30 seconds more, then add sweetener and beat until it is smooth and like whipped cream. Pour or spoon onto pie, smooth. Top with toasted coconut. Toss in fridge for another 15 minutes before slicing and eating!
Oh, and The Lady says “that’s really good pie!”
