Snowy Thursday quickie… biscuits rebooted. Lower calories.

Get your mind outta the gutter, not THAT type of “quickie” :D. Been messing with biscuits to get the calories down without sacrificing flavor and texture. I know everyone is busy getting ready for the weekend so will keep this short (like Hobbits 😀 ).

Hobbit’s biscuit with less calories

Crust Ingredients:

2 lg egg
2/3 cup Almond Flour (We LOVE Anthony’s for quality and price)
1/4 cup oat fiber
1 tbsp coconut flour
2 tbsp butter, softened
1 tbsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/4 cup water, warm (whatever is “hot” out of your tap)

Preheat oven to 375F

Beat egg well in a bowl or zip it up in a blender. In separate bowl, add dry ingredients, then butter. Using mixer or couple of forks, stir or mix the butter around in the dry until gravel-like texture. Add eggs and water, mix quickly and roughly to a lumpy dough that is a little wet like cookie dough. Scoop out onto a greased sheet or pan in four “biscuits,” wet hands and shape as needed (I used a muffin-top pan but a baking sheet is fine). Bake for 15 minutes or until start to brown on edges. Remove. Cool or butter hot and eat.
