While getting all the fixing ready today and after we had pancakes, The Lady suddenly had an urge for crackers. Yeh. We had a turkey in the oven (and damn, nothing like a turkey to remind you just how small your oven really is), stuffing, kabocha, green bean casserole waiting to go in next, and two pies in the fridge. Yet, she wanted crackers and cheese. Since I hate to say ‘no’ to the lovely one, I had to see what I could do. I searched for recipes, found a few that I could use with what I have in the kitchen. The results?

Not great.
They sucked.

She wanted a crispy cracker, not a pile of square dust. So, it was time to invoke the Hobbit brain and see what I could come up with on my own. Three tries later, I got it. I promise, no weird ingredients. No 312384123 steps. Pretty simple recipe with results.

Hobbit's Garlic Chive Crackers

  • 3/4 cup almond meal\flour
  • 1 egg
  • 2 tbsp butter softened
  • 2 tbsp ground flax meal
  • 1 tsp garlic powder
  • 2 tsp chopped or dried chives
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Preheat oven to 400F

Whisk egg until well combined. Add the rest of the ingredients, stir and fold with a large spoon or rubber spatula until you have a solid ball of dough. Put it in the fridge for about 15 minutes to rest and firm up.


Remove the dough. Place on a piece of parchment or silicone mat. Place another on top, then roll out the dough into a rectangle about the thickness of a quarter or a little thicker. You don’t want these too thin, they won’t puff up a bunch when baked, so think the size of a commercial cracker.


Use a pizza cutter or long knife to cut them into squares (or use a cooking cutter for fun shapes).


Place the parchment\mat on a baking sheet. Put in the oven for 8-10 minutes. Take them out, flip them over, and bake for another 5 minutes or until the edges start to brown. Remove from oven, let cool on sheet, then break apart.
