One more pie recipe to share. If you like the traditional Southern Pecan Pie (darker with a stronger ‘molasses’ flavor, just use the dark version of my ‘corn’ syrup). New England Pecan Pie is lighter in color and taste. Not going to drag this one out either, the Hobbit has food stuff to do today!!!

Hobbit's New England Pecan Pie

Ingredients – makes one 9″, 8 slice pie:

Preheat oven to 350F.

Put all the ingredients in a bowl except pecans, using a whisk, spoon, or rubber spatula, mix the hell out of it until you have a smooth, well-mixed batter.

Fold in 1 cup of the pecans.

Pour into crust (it will be a little thick so might need some help). Smooth the top.

Sprinkle the other 1/2 cup of pecans on the top of the pie.

Place in the oven for 40 minutes, take out at 20 minutes and use strips of tin foil to cover up the top edge of the crust so it doesn’t burn. It is done when the top is firm and bounces back when you lightly touch it.

Let cool.
EAT!!
