Bread is the one keto thing that I find is freaking all over the map. Some recipes look amazing online but I can never get them to come out right – too dense, too dry, too…ummm.. NOT BREAD.

Then there’s the ‘oopsie’ and ‘cloud’ breads. If you follow me, you know the two things I despise when looking at a recipe are:

Too many steps
SEPARATING AND FOLDING FREAKING EGGS!!!

If I have to separate 27.5 eggs, while standing on one foot, holding one eye closed 56.78989234%, at 65.243F but only when Mars is retrograde to Pluto (and we know Pluto is no longer a planet so you do know how hard that is???)…it isn’t going to happen.
NOPE.
NO WAY.
NOT THIS HOBBIT!
Plus, oopsie and cloud breads taste like, well, NOT BREAD. If I want a dry omelet, I’ll make one.

I needed bread for stuffing. I have a dinner roll recipe that works well. Can I tweak that for a loaf of bread?
Yup.
Oh. And no separating eggs. No folding whites. No 142 bowls and utensils. Nope. A blender will do the trick :).

Hobbit's Protein Bread

  • Servings: 10

Ingredients (makes 10 slices):

5 tbsp coconut flour
4 tbsp unflavored whey isolate ( used Piping Rock – not affiliated with them, just good stuff!)
2 tbsp butter (melted)
2 tsp bacon grease (melted)
1.5 tsp baking powder
1 tsp salt
1/2 tsp xantham gum
1.5 tsp apple cider vinegar
4 eggs
1/8 cup warm coconut or almond milk
1/2 envelope (about 1tsp) of fast-rising yeast

Preheat oven to 350F

Warm the milk to a little above body temp, then dissolve the yeast in it.

Get out a bread pan – I used a 4×8. If not silicone, lightly grease.

Dump all the ingredients (including milk\yeast mixture) into a blender or food processor. Melt the grease, add that as well, then blend\process until well combined and a little thick – think cake batter consistency. Pour\spoon into your bread pan, then spread smooth with spatula or back of a spoon.

Pop in the oven for about 25 minutes or until the top browns. Take it out

and let it cool completely before turning onto a cooling rack.

  3. I just made this bread. While it looks good, there is no way the bread in your photo is the same. It was either doubled or tripled on the recipe, but it doesn’t rise like that.

  4. I’ve noticed in several of your bread recipes you call for bacon grease and I am sad to say I do not have any. What can I use as a substitute ? I was thinking butter but wasn’t sure. Thanks for your time
