My Home made ketogenic pizza

Keto Pizza

Pizza Crust

Dry Ingredient :
30g Inulin Powder
20g Almond Flour
20g Golden Flaxseed
20g Whey Protein Isolate
20g Micellar Casein Isolate
5g Psyllium Husk
5g Gelatin Powder
2g Salt
1g Garlic Powder
1g Pepper
1g Nutmeg Powder
2g Baking Powder
1g Baking Soda

Wet Ingredient
30g Eggs
20g Cream Cheese
50g Coconut Milk
50g Warm Water
Cheese Sauce
30g Butter
30g Cream Cheese
30g Grated Cheddar Cheese
1 egg yolks
30g Splenda or 5g Stevia
20g Inulin Powder
5g Lemon Zest
20g Lemon Juice
2g Gelatin Powder

Grated Dark Chocolate 85%
Almond Slice
Grated Cheddar Cheese
Grated Mozarella
Splenda Powder
Sesame Seed
* Cream Cheese Frosting at the top

Preheat the oven at 300F

Mix all dry ingredients on a standing mixer and add the wet ingredient, mix for 5 minutes at speed 1 to 3 until forming a dough (a little tacky)

Form a round dough with roller pin (I use plastic wrap over the dough), aim as thin as possible, I use 32cm Pizza Pan or 20cm x 20cm cookies pan, which result 5mm to 8mm thick dough

bake for 15 minutes at 300F or until the edges has just starting to brown, set aside and let it cooling down for about 10 minutes

Mix all the cheese sauce ingredients with a mixer until thick and creamy (I start with creaming the butter, followed by gelatin powder, inulin powder and splenda until the mixtures thicken, then add the rest of the ingredients)

spread the sauce evenly over the half baked Pizza dough

Add your choice of Pizza topping and bake again for another 10 to15 minutes until the mozarella cheese has melt

Optional : you can give the dessert Pizza a cream cheese frosting (3tbsp cream cheese, 3tbsp coconut milk, 1tbsp butter, a pinch of salt and splenda to taste)
Serve with Black Coffee or Green Tea
