Who has give me the challenge to create a ketofied compact rice.
From this challenge, I have also invented a new form of rice by grating or dicing this Keto-Ketupat into small pieces, and can be eaten or cooked exactly like a real rice.
Eureekaaa.. Finally a Keto-Rice that doesn’t taste awful, and so easy to make with only few ingredients.
This rice is so much better than riced cauliflower or ‘miracle rice’ product made from konjac flour, coz the taste & textures are almost exactly like the real cooked rice (starch texture). I even have use this Keto-Rice for my pediatric clients whose on therapeutic keto protocols for their health issues.
And their parents are so glad for this invention that make them easier in keeping the keto protocols stay on the right track without having to cheat with high carbs laden foods from their children cravings (such as fried rice)
This keto-rice can be cooked into fried rice or other dishes that use rice as the ingredient. And it’s only need a rice cooker to keep it warm like a real rice does.
So once again, thank you Izanudin Zakaria, and this recipe are also for my Asian Keto-Fellower that miss this staple foods and to keep you guys stick on keto even at your low will power days, and of course with an effort & time to make this and more cost from the ingredients required.

Keto-Ketupat (Compact Rice)
(3,4g Net Carb : 14,5g Protein : 17,5g Fat : 32,3g Fiber)
35g Inulin Powder
10g Casein Protein Isolate
5g Egg White Powder
1g Xanthan Gum
1g Garlic Powder
50g Coconut Milk
5g Coconut Oil
Sift all dry ingredients together until well combines on a big bowl
Add coconut milk gradually and stir with spatula until a rough dough formed
Add the coconut oil and fold with spatula until combines, then start using your hand to knead the dough until smooth
Form the dough into a rectangle cube with 1 to 2 inch thick
Steam the dough using low heat for 1 hour
Divide the steamed dough into small cubes and serve with curry dishes as Keto-Ketupat
Keep the left over warm on a rice cooker before served
