Almond Butter Cheesy Cookies

Keto Iron Chef's Almond Butter Cheesy Cookies

20g almond flour
30g inulin powder
30g whey protein isolate
20g micellar casein isolate
30g egg yolk powder
5g psyllium husk
5g gelatin powder
2,5g baking soda
2,5g bakers ammonia (optional) – make the cookies crispier
(Sift all these ingredients together)

15g splenda /sucralose
5g stevia powder
30g inulin powder
(Sift all these ingredients together)

Wet Ingredients
1 egg
1 egg yolk
50g natural almond butter
30g softened cream cheese / 50g grated cheddar or parmesan cheese
70g butter (room temperature)

Preheat the oven to 300F

On a stand mixer, cream butter and Keto-Sugar until white

Add egg and egg yolk then mix until the batter is thick and creamy

Add the almond butter and cream cheese / grated cheese gradually until well combined

Stop the mixer and add the Keto-Flour 3 times by dividing the flour first. Mix with spatula until the well combined and have a crumbly dough consistency

Move the cookies dough to a sill plate or parchment paper then by using plastic wrap over the dough, start flattening the dough into 1/2 inch of thickness

Use cookies cutter to shape the cookies and remove them to the baking pan, which had been sprayed with cooking spray oil or greased with a little shortening

Bake the cookies for 15 minutes or until the cookies edge are starting to brown

Remove the ookies from the oven and let it cool for 10 minutes before removing them to the wire rack

Serve the cookies with black coffee or green tea

Note : you can use this cookies dough as a pie crust, cheesecake crust, egg tart crust or you can play with the dough to make filled cookies, such as with cheese filling or chocolate filling or peanut butter filling and also give an egg wash over the filled cookies
Giving a sprinkle of dessicated coconut will gives more crisp texture to these cookies
