Keto-Almond Pie
1 – 2 serving size

Keto Iron Chef's Keto-Almond Pie

* For Pie Dough
Dry Ingredient
10g Casein Protein Isolate
10g Whey Protein Isolate
5g Egg White Powder
5g Egg Yolk Powder
20g Inulin Powder
1g Xanthan Gum
1g Salt
5g Sucralose
* Note : The first 6 ingredients above are the Keto-Flour formula for this recipe

Wet Ingredient
35g Butter
15g Egg White

* For Pie Filling
5g Egg Yolk Powder
5g Inulin Powder
5g Casein Protein Isolate
0,5g Vanilla Extract
0,5g Nut Meg
1g Salt
2g Dark Rum
5g Sucralose
15g Egg
25g Heavy Whipping Cream
10g Butter
Note : if using “Torani Sugar Free Vanilla Syrup”, omit Heavy Whipping Cream, Inulin Powder, Casein Protein Isolate, Vanilla Extract & Sucralose. Use 35g of the syrup to substitutes

* Topping
30g Roasted Almonds (diced) or Shelled Pecans

* For Pie Dough
Preheat the oven into 300F

Whisk all the dry ingredients together on a medium bowl

Add butter, then mix with a spatula until the dough comes together

Add egg white, then mix again until the dough become smooth

Divide the dough into 2 equal dough balls then roll each dough into flat circle with 1/2 inch thickness

Ease each dough into the bottom of 2 lightly greased 3 inch aluminium pie shell, and crimp the top edge. Pierce the bottom in several place with fork

Bake the pie dough for 15 minutes

* For Pie Filling
Melt butter on a sauce pan over low to medium heat

Add heavy whipping cream, Inulin Powder, Casein Protein Isolate, Egg Yolk Powder and sucralose and stir to combine.

Add egg the last and stir until the mixture thickens, then turn off the heat, set aside

Fill each half-baked pie dough with diced roasted almonds (or shelled pecans),then scrape in the pie filling until level with the top edge of the pie dough

Bake again for 15 – 20 minutes, until the nuts are lightly browned and filling is just about set. The filling will puff up and may be bubbling, but it will settle as it cools.

Serve with black coffee or green tea

* Note : The ingredients of this recipe can be multiply to larger serving size with larger single pie pan. This recipe is using 2 x 3″ pie mould and to fit into 9″ round pie pan, the ingredients quantity can be multiplied by 8
