Keto-Green Tea Cookies
(4 – 6 serving size)

Ingredients
Dry Ingredients
40g Inulin Powder
20g Casein Isolate
20g Whey Protein Isolate
10g Egg White Powder
10g Egg Yolk Powder
2g Xanthan Gum
2g Salt
10g Sucralose
5g Japanese Matcha Green Tea Powder
1g Baking Soda
1g Bakers Ammonia

Wet Ingredients
30g Egg
50g Cheddar Cheese (grated)
80g Butter

Direction
Whisk all the dry ingredients together except for the Matcha Green Tea Powder on a medium bowl, set aside

On a standing mixer with a paddle attachment, beat butter until white with the speed set at stage 1

Add egg and grated cheddar cheese gradually, by raising the speed into stage 2 until light and creamy

Lower the mixer speed back into stage 1, then add the Matcha Green Tea Powder until combines.

Pour 1/3 of the whisked dry ingredient into the mixer bowl until combined and turn off the mixer, then pour the rest of the dry ingredients and fold with a spatula until thoroughly combines

Rest the cookie dough in the refrigerator for 10 minutes, and preheat the oven into 300F

Using roller pin, flatten the cookie dough into 1 cm thick on a silicone pad, then use a cookie cutter to shape the cookies and remove each cookies onto the baking pan

Bake for 10 – 15 minutes, until the cookies edge start to look brown

Cooled the cookies on the baking pan for 10 minutes before removing them onto a tight sealed jar
