I hear about people eating the same meals, asking for sample menus, and talking about not ketofying ‘real’ foods. If that is you, I’m jealous and think that is awesome. I don’t know if it is my ADD, Italian genes, or that I just resist change but I cannot do that. Nope. I need VARIETY! Tonight, for Date Night, I decided to make The Lady one of my favorite Italian dishes – Marsala. Traditionally, it really should be veal and not chicken, but up here in the middle of nowhere, veal is about as easy to find as bikinis in January…nope! So I’m doing the ‘American’ variation with chicken. Now, in theory, marsala would be keto-friendly if it wasn’t for the wine, and for some of you, the wine might still work. We are a dry house and anyway, alcohols mess up my system so I went with a variation (ha, if you are a regular here, you know variations are my thing :)) and no, it’s not kabocha, lol. I’m using some rice vinegar to get that dry hit with sweet that makes Marsala so yummy. Added to that, risotto is pasta. Oops. Hey, why not cauliflower risotto?

Ok, back to dinner. Friday nights are Date Night for us, it closes the week out and starts the 3 day stretch of ‘The Lady Gets a Break From Meal Planning, Hobbit it’s YOUR TURN!’ We used to get take-out on Friday, but since going keto we have changed that. One of my favorites is our Date Night Pastrami Stromboli but tonight, I wanted to do something special for her since it’s been a long couple of weeks of being sick plus this week, we had a household tragedy. Yes. We had a major loss :(.

That’s ok, it gives us a reason to upgrade our machine, we ended up with a Bunn and I can honestly say, if you have the means to do this upgrade and love coffee, this is a great machine. 3 minutes a pot. Yeh. THREE MINUTES! I love our new addition to the family :).

Ok, back to food. Are you ready to make some Marsala and risotto?

Risotto (makes 4 servings):

  • 1 package frozen cauliflower
  • 2 tbsp diced onions
  • 1 tbsp minced garlic
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • 2 tbsp butter

Nuke cauliflower until cooked (7-8 minutes). Rice the cauliflower in food processor or blender. Heat sauce pan on Med-High, then add olive oil. Let oil get hot. Add onions and cauliflower, stir frequently until the onions are transparent and the cauliflower soft. Add butter. Stir until melted, then let simmer for about 5 minutes. Add rest of the ingredients, reduce to Med and let reduce until creamy.

Chicken Marsala (makes 4 servings):

  • 1lb cut chicken breast
  • 2 tbsp diced onion
  • 1.5 cups sliced mushrooms
  • 2 tbsp minced garlic
  • 3 tbsp rice vinegar
  • 1/2 cup chicken broth
  • 1/2 tsp thyme
  • 1/4 tsp salt
  • 2 tbsp butter
  • 1/2 tsp xantham gum

In a large skillet at Med-High melt butter until gets foamy. Add chicken. Cook the chicken until no more pink shows, then add onions and mushrooms. Cook until mushrooms are soft and not rubbery any more. Add rest of ingredients except xantham gum. Let cook until liquid about half reduced. Sprinkle xantham gum over the mixture and stir in. Let simmer until sauce thickens. Serve and enjoy!!

  3. I am so excited to try some of your recipes and truly enjoy reading your posts. You are very witty and come across as a normal Joe with a great sense of humor going down the same path as many of us. Many of the low carb recipes I have tried so far have been…how do I say it…AWFUL. People rave about them, I try them and wonder if these people have ever tasted good cooking. I’m making the Pumpkin muffins tonight after work. Hope they are as good as they sound!

I’ve had similar experience with some others’ recipes, very frustrating when they don’t come out like they look in the pictures.
