Five days of Food.
Chicken spinach and feta cheese pinwheels.
This is not a good picture but there is none left for me to try to take another..lol
I needed to come up with a low carb, low cal quick weeknight dinner. You can make this ahead and then a day or 2 later just reheat till warm. It does use convenience food which does make it convenient..lol You could use fresh spinach and make your own white sauce if you wanted.
1.50 cup,Green Gian Cut Leaf Spinach & light Butter Sauce (1 package)
1.00 large, Eggs – Whole, raw
2.25 ounce, Feta Crumbled Cheese
0.50 cup, Cream of Chicken & Mushroom Soup (1/3 of can)
1 lb lean Ground Chicken
Garlic powder, salt, pepper, oregano
mix the ground chicken, egg and spices. Spread on a cookie sheet lined with foil or parchment paper and put in freezer for about 15 min to tighten up.
Prepare frozen spinach in microve.
When chicken is firmed up a bit, take out of freezer and add the spinach and the crumbled feta cheese. Start at one and and using the foil or parchment paper start rolling up the chicken. You will end up with one nice size log. Bake at 350 for about 20 min.
Put 1/3 can of soup in pan and thin out with some half and half or heavy whipping cream. Pour this sauce over the chicken when done. After the roll has rested for a few minutes you can cut into slices.
This served 4 but 3 of us could have eaten it all …lol According to my fitness pal the stats are:
fat 15 grams
Carbohydrates 7 grams
Fiber 3 grams
making this 4 net carbs per serving. I served it with Mock cauliflower mashed potatoes and fried cabbage ( Just took shredded cabbage and fried in butter and olive oil with salt, pepper and a bit of garlic powder)
