Quickie for Saturday – Pumpkin Muffins for breakfast? Yes please:)

Busy day today so this post won’t be as long-winded and rambling as most of mine. You’re welcome :). Needed something tasty and healthy for breakfast this morning before heading out to do yard cardio. This works. Pumpkin muffins. Nailed it:)

Hobbit's Pumpkin Muffins

  • Servings: 6
  • Difficulty: easy

  • 1/4 cup Coconut Flour
  • 0.5 Scoops (33g) vanilla whey protein powder (we use Dymatize Elite, YMMV)
  • 1 Cup, Baked Kabocha Squash (don’t know about kabocha? hit the link!)
  • 0.5 cup granulated stevia
  • 0.25 cup Almond Milk
  • 2 tbsp Butter, melted
  • 3.00 large, Eggs
  • 1.00 tsp(s), Vanilla extract
  • ** 1.00 tsp(s), Spices – Cinnamon, ground
  • 1.5 tsp(s), Baking Powder
  • 0.50 tsp(s), Salt, table
  • ** 0.50 tsp(s), Spices, ginger, ground
  • ** 0.25 tsp(s), Spices, cloves, ground

** You can replace the ginger, cinnamon, and cloves with 2 tsp of pumpkin spice

Preheat your oven to 350F. Get out a muffin pan and lightly grease all with coconut oil (I use the spray type because not only do I like simple, I’m freaking lazy too).

Combine all the wet ingredients (including the kabocha) for the in a bowl, beat until smooth. Put all the dry ingredients in a different bowl, then whisk to combine\break up clumps. Add the dry to the wet, and beat until smooth, scraping down the sides. Using a 1/3 cup measuring cup or large soup spoon, drop the batter into your muffin tin and fill each one to just below the top.

Place in oven for 25-30 minutes or until the tops puff up and start to brown.

Let cool to touch before removing from tin, then put on rack to finish cooling…

or slab some butter in them and eat warm!!

    1. I had never even heard of kabocha until this year when I bought it by accident and decided to look into what the hell it was I just bought that wasn’t a buttercup :). Now I’m a huge fan.       1. Oh ya kabocha is awesome…I’ve made pudding with it!! I made these muffins last night…buuuuuut…I got a little lazy/impatient and instead of running to the store, then cooking the kabocha, I subbed with pumpkin puree and it turned out awesome! I added a few pumpkin seeds on top too. These will make awesome snacks for the week. Thanks!

  3. These were so yummy! Even my picky 3 year old enjoyed them, slathered with grass fed butter! I mixed my batter in the vitamix & it came out well. Was your nutritional info based on 6 muffins? I used a 12 muffin pan.
