YES!! You now can do all those recipes that call for this like PUMPKIN PIE, 5 LAYER BARS, or hell, just dump it in your coffee for a sweet treat.
Keto Sweetened condensed milk:
- 1 14 oz can of unsweetened coconut milk
- 3 tbsp heavy cream
- 1/3 cup granulated stevia
- 2 tbsp butter
- 1/2 tsp xantham gum
Heat the coconut milk and cream in a sauce pan on medium heat, whisking occasionally until it starts to bubble. Once bubbling, add the butter and whisk in. Once butter is combined, add the stevia a little at a time, constantly whisking so it doesn’t clump up.
Continue to heat and whisk while bubbling, about 15 minutes or so until it starts to thicken and goes from white to a pale amber. Shut off heat, whisk in xantham gum. Let sit for about 5 minutes on the burner with burner off, whisking every 30 seconds or so. Remove from stove and pour into container. Let cool completely.
