Another result of the 5-layer bars. Chocolate and butterscotch chips, good for cookies too!!


Alternatively, if you can find sugar-free, low carb chips of each, you could use those. I’ve had zero luck in our area so kitchen Hobbit is my solution :).


  • 1/3 cup coconut oil
  • 2 tbsp cocoa powder
  • 1/3 cup granulated stevia
  • 2 tbsp heavy cream

Melt the coconut oil in the microwave until completely liquid. Wisk in the cocoa powder until smooth. Add stevia slowly while whisking until smooth. Add heavy cream, whisk until incorporated. Let sit for a couple of minutes, then whisk again. Get out what you are going to use for a mold and pour into the mold. I use a silicon bread pan but anything will work – muffin tins, bar molds, even ice cube trays. Put the mold in the freezer.

Butterscotch chunks:

  • 1/3 cup butter
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/3 cup granulated stevia
  • 2 tbsp heavy cream

Melt the butter in a sauce pan over low to med-low heat. You want it to be lightly bubbling. What we want to do is brown the butter slightly but not burn it. Stir often until it darkens some, about the color of caramel. Remove from heat, whisk in the rest of the ingredients until well combined. Immediately pour into your mold, then put in freezer with the chocolate. While you’re at it, if you are going to chop the chocolate and butterscotch up instead of hoping you can smash into pieces, put your knife in the freezer too. Yeh. Do it. It will keep the chunks from sticking to the knife when you prep it. You’re welcome 🙂
