Low carb, high protein, yummy breakfast sammich to start the day!

It’s Sunday and Sunday is the day The Hobbit does breakfast for him and The Lady. The rest of the week she does breakfast for me, Sunday I return the favor (a little unbalanced, I know…). Back before we did a change of life, this was usually a HUGE stack of fluffy and full-of-carbs-and-gluten pancakes, dripping with syrup (the real maple stuff because here in New England, we don’t do Log Cabin), and a sausage or bacon. Obviously, the pancakes became a problem. Like many, we sometimes struggle to get in all our protein for the day. About every other day, we start off with a protein shake as breakfast and I started thinking, what if I could make a pancake with the protein powder? Then I started thinking…hmmmm…and sausage stuffed between it? BREAKFAST PANCAKE SAMMICH!!! Move the hell over, Ronald, The Hobbit has a solution! After much experimenting, I’ve nailed it!! This also gave me an excuse to try out my new Wilton Breakfast Sandwich pan that I picked up yesterday:). If you don’t have one of these badboys, no worries, just make them in a skillet like you would a ‘normal’ pancake.

McGriddle fake Protein-rich breakfast sammich!

1 scoop vanilla protein powder (I used Dymatize Elite Whey Isolate)
1 T coconut flour
1/2 tsp baking powder
pinch of salt
1/4 c almond\coconut milk (or 1/8 cup cream and 1/8 cup water)
1 large egg
1 turkey sausage patty (or Canadian bacon, bacon, or ham)
1 slice of cheese (optional, I didn’t use for today)
1 fried egg (optional, I didn’t use for today)

For a maple flavor if you miss it, add a couple drops of maple extract.

If using a skillet, heat it to medium. If using a pan like I did, pre-heat oven to 350F.

Beat the eggs until frothy, then added the milk and beat until incorporated. Add the dry ingredients and stir until all the lumps are gone. Pour into your pan of choice (if using the oven, bake for 12 minutes or so until brown around the edges and fluffy) and nuke your meat. Assemble. EAT!
