3 Ingredient salted (or not) Keto Caramel!!!

I’ve been struggling with this one for a while. I love some gooey, sweet and salty sauce on my baked goods and ice cream, but if you buy it, it is LOADED with sugar and carbs. I’ve tried countless different ideas I’ve found online and each one has failed in some way – most of the time I get a layer of clear fat on top of what ends up being hard candy (so not a complete failure, lol) and that just won’t cut it. FINALLY, I found the solution and it’s soooo easy!!

Keto Caramel!

Ingredients:

1/4 cup butter (salted if you like salted caramel, or unsalted if not)
1/4 cup heavy cream
1 TBSP Stevia powder

Melt the butter over med-low heat in a non-stick pan. On my stove, 2.5 is is med-low, you might have to adjust accordingly but I hate these recipes that give ‘med-low’ when all you have is numbers:(.

Stir frequently so it doesn’t burn, you are looking for it to get to a mid-amber color. Once this happens, remove it from the heat and pour into a bowl. Quickly whisk in the cream, while whisking, add the sweetener slowly. Whisk for about another 15 seconds, then pour back into the pan and return to the heat

Keto Caramel!

Stir this constantly, making sure it doesn’t burn. Wait for it to thicken some, not really thick, but thick enough that is ooooozes off whatever you stir with instead of dripping off like water.

Remove from heat. Pour BACK into the bowl. Whisk vigorously for another minute or so, then either use
it or pour into a glass container and refrigerate. Done!!

Makes 1/4 cup of caramel. Nutrition information based off 1 TBSP of finished product.
