I can’t take credit for this one, the lady created this recipe. I’m just going to share it because it’s too freaking awesome. When I started this journey, I never thought I’d be able to have CANDY BARS and LOSE WEIGHT!!!
Here it is:
You will need protein powder to make these, otherwise everything else should be pretty straight forward.
Fast Break (Makes two 4″ bars)
1 scoop of vanilla protein powder – we use Dynamize Elite since it only has 2 carbs per scoop and 25g protein. Or, use unflavored for even less carbs and add extra stevia and a teaspoon of vanilla extract. Your call:)
Teaspoon of stevia
Melted chocolate (I use 4 parts coconut oil\butter to 1 part cocoa powder 2 parts granulated stevia), warmed in the microwave and whisked up with 2 tbsp of heavy cream to make ‘milk chocolate.’ For this recipe, 4tbsp of coconut oil or butter, 1 tbsp cocoa powder, and 2 tbsp stevia (granulated).
PB or almond butter
Sugar-free caramel (see below)
For the caramel:
3 Tbsp salted butter
1/3 cup granulated stevia
1/4 cup heavy cream
1/4 tsp xanthan gum
Melt the butter and sweetener together in a small saucepan over medium heat. Cook, stirring constantly for about 2 minutes or until bubbling. Add the cream and, xanthan then whisk continually, 3-5 minutes over medium heat. It will get darker in color the longer you cook it. Remove from heat when your desired color is reached. Let it cool slightly to thicken.
To make the ‘nougat’ for the bars:
Add 2 teaspoons of the water to the dry ingredients and stir with a spoon until it is as well mixed as possible. Add up to 1 more teaspoon of water if necessary and work this in with your hands. Don’t be tempted to add more water no matter how dry it seems. The more water you add, the sticker the bar will be and the worse it will stick to your teeth. The dough will eventually come together when you firmly knead it by squeezing it into a ball in your hand. The consistency will be very stiff like modelling clay. Shape into a bar. Put on parchment or waxed paper, toss in the fridge to firm up for about 30 minutes.
Take out. Spread 1 tbls of caramel over the bar, then½ tbls of peanut or almond butter on top of that. Cover with chocolate (dip and rotate works for me in a bowl). Return to fridge to harden chocolate. EAT!!!!!
