OMFG, what do I miss being Keto? SWEETS!! PASTRIES!! Well, now I don’t! One of my favorites has always been Cheese Danish. I can remember getting them from the local deli in the little town I grew up in, our dad would pick them up occasionally as a treat. Well, as I got older, I loved them more. Too much more. WAYYYYYYY too much more. But now, I have an alternative that fits my lifestyle and lets me stay healthy. So, here we go, low carb CHEESE FRIGGING DANISHES!!
1 1/2 cup 2% mozzarella shredded cheese
4 tbsp almond meal
3 tbsp Coconut Flour
4 tbsp Stevia
1/2 tsp baking powder
1/2 tsp almond extract
4 tbsp Coconut Oil
8 oz cream cheese
1 tsp lemon juice
1 tsp vanilla extract
1/4 cup Stevia
Preheat oven to 400 degrees.
Soften cream cheese and combine with lemon juice, vanilla, and sweetener and egg yolk using a whisk or electric mixer. Set aside in the fridge until you are ready with the dough.
Measure out almond flour, coconut flour, and baking powder. Combine well with a whisk.
Add oil, egg, almond and sweetener. Stir.
Melt 1 1/4 cup shredded mozzarella cheese in the microwave (40% power for 2 minutes with a 900 watt microwave).
Stir until batter is combined and the cheese and dough are completely mixed. Use your hands or a spatula to press and fold the cheese and the batter together. Reheat for 15 seconds in the microwave. Press and fold some more uniform color.
Reheat dough for 15 seconds and roll out into a square the approximate length of a rolling pin (cover the dough with a sheet of plastic wrap so it doesn’t stick) and slice into 8 squares with a pizza slicer.
Fold the corners into the center repeating with all 8 squares.
Spoon into the center of each danish.
Bake for 10-12 minutes.
